Sweet Potato Souffle

Ingredients

  • 3 cup sweet potato puree
  • 1/3 cup sugar
  • pinch salt
  • 3 eggs
  • 1 vanilla bean
  • 1/2 cup pineapple juice
  • 1/2 cup matzah meal or potato starch

Instructions

  • Preheat oven to 325⁰F.  Grease a baking dish.
  • In a large bowl, combine the sweet potato puree, sugar, salt, eggs, vanilla, and pineapple juice.
  • Fold in the matzah meal or potato starch. Pour into baking dish, cover with foil, and bake for 40-45 minutes.

    It would also be appropriate to include the size of the baking dish in your recipes.

    The vanilla bean cannot simply be mixed in with the other ingredients. You must be missing a preparation step in this recipe.

    how do you make the puree? can i use just plain mashed sweet potatoes?
