Sweet Potato Zucchini Kugel

Ingredients
- 2 sweet potatoes
- 2 zucchini
- 4 eggs
- ⅓ cup almond milk
- Dash of cinnamon
- 1 teaspoon vanilla extract
- ⅓ cup agave nectar
- 2 tablespoons stevia
- 1 cup white whole wheat flour or whole wheat pastry flour
- ¼ cup oil
- 1 teaspoon baking powder
- 2 teaspoons oil
Instructions
- In a food processor, shred the sweet potatoes and zucchini.
- In a large mixing bowl add eggs, milk, sugars, vanilla and oil. Mix and slowly add flour.
- Pour into prepared baking pan. Use a 9-inch pan for a thicker kugel or a 9- by 13-inch pan for a thinner one. Add 2 teaspoons of oil on top of your batter to give it an extra crispy taste.
- Bake at 350° F for about 45 minutes until golden brown.











My husband is allergic to almonds and soy. Can I use real milk?

I would say about medium size which is a bit less than 1/2 pound per sweet potato and per zucchini
Any hints on how much (weight or in cups when shredded) for sweet potatoes and zucchini- they all come in such a variety of sizes.
Should either or both the sweet potatoes and zucchini be peeled before they are shredded?
They don’t need to be, but it is up to you
Stevia is from a plant and is not considered a sugar. If you’re a diabetic, it is fine for those that have diabetes.
I’m making it tomorrow and will be using canola. It’s a light oil and a light taste

i eliminated the stevia and added 1 tsp salt. It came out delicious

Yes you can use honey and try switching
to almond flour, it should be fine!
FYI: Eggs aren’t included in the directions.
May I use honey to replace the agave? Is the stevia necessary if I’ve got the honey? Also, I’d like to replace the wheat flour with almond flour.
