Sweet Sutlac Rice Pudding

Inspired by reading the book, The Beauty Queen of Jerusalem, which chronicled 4 generations of a Ladino family in Jerusalem and their Shabbat morning tradition including rice pudding decorated with a cinnamon Jewish star, I bring to you this simple rice pudding.  

It’s so fun to bring the pages of a book to life with food and I couldn’t get this one out of my head.  After doing some research I found that the rice pudding is actually very similar to Malabi, a Middle Eastern milk pudding that also is often infused with rose water, but while malabi is typically served with a sweet syrup, Sutlac is simply garnished with cinnamon, or rather not so simply if you want to make a cinnamon Jewish star like we did!

This dish is usually enjoyed at room temp or even chilled, but my family liked it heated.

1 Servings

Ingredients

  • 2 cups milk of choice
  • 2 tablespoons sugar
  • 3-4 tablespoons rice flour
  • 1 teaspoon rose water optional
  • Cinnamon for garnish

Instructions

  • Combine milk, sugar, and 3 tablespoons ground rice in a small sauce pan over low heat.  Stir constantly with a whisk to prevent lumps, until mixture is slightly thickened.
  • Remove from heat and pour into individual serving dishes, sprinkle with cinnamon and serve.

    What is the hebrew/ladino name for this dish? It starts with L, that is all I know.
