Tunisian fricassee refers to a sandwich usually made with a specially fried bun stuffed with oil-packed tuna, hard boiled egg, potatoes, olives or pickles, sometimes preserved lemon, and always harissa.
While the specialty fried bread is an amazing component of this sandwich, these days many local shops use baguettes, so feel free to try with any sandwich bread.

- Preserved lemon sauce (optional)
- Potato, boiled, peeld and cubed
- Oil packed tuna
- Hard boiled eggs, sliced
- Israeli pickles, sliced vertically (optional)
- Olives, pitted and havled (optional)
- Prepared tahini
Spread harissa and preserved lemon sauce, if using, on one half of bread. Top with potatoes, tuna, hard boiled eggs, pickles, and olives. Drizzle with tahini.
Tip: to prepare the fillings, bring a saucepan of water to a boil, add a small unpeeled whole potato and boil for 20 minutes until just starting to soften. Add the eggs to the water and boil for an additional 8 minutes. Drain and transfer to ice batch. Once cool peel and cube potato and peel and slice eggs.
