Vegetable Lo Mein
You can add chicken or beef or tofu to this to make it a more complete meal, but it is great as it is.

Ingredients
- 1 tablesppon vegetable oil
- 1 onion finely chopped
- 2 Cloves garlic, minced
- 1 teaspoon grated ginger
- 1/2 can baby corn, cut up
- 1 lb. mushrooms, sliced
- 3 green onions, diced
- 1 tablespoon Soy Sauce
- 1 teaspoon rice vinegar
- 1/4 teaspoon seseam oil
- 1 teaspoon arrowroot or cornstarch
- 1 cup broccoli flowerets
- 1 pound fresh lo mein noodles (or cooked spaghetti)
Preparation
1 Heat wok or large pan over high heat. Mix soy sauce, vinegar, sesame oil and arrowroot in a bowl, set aside. Add oil and onion, saute for 2 minutes. Add garlic and ginger, stir until frargrant.
2 Add baby corn and mushrooms and broccoli. Stir until beginning to turn color. Add noodles and then sauce, mix up until it is all incorporated.
3 Serve hot.
