Homemade Vegetarian Empanadas

Vegetarian Beef Empanadas

Fake meat works magic in this recipe for empanadas so that no one would know they are vegetarian.  Keep it simple with puff pastry or make your own empanada dough, either way they are are delicious.  They freeze well too.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon paprika
  • 4 onions
  • ½  teaspoon chili powder
  • ½  teaspoon oregano
  • 1 package vegetarian ground beef
  • 1 tablespoon Tomato paste
  • Empanada Dough or frozen pastry dough defrosted

Instructions

  • 1 In frying pan, heat oil with paprika and saute onions until soft. Add chili powder, oregano, and salt. Add fake meat and mix with onions. Add tomato paste and cook until hot.2 Place a spoonful of stuffing on half of each dough circle. Fold dough over filling. Wet the edge with milk, fold over again and seal. Bake in a 200°C/400°F oven until cooked and lightly browned.

    The package is between 12 ounces and a pound, and the onions would be on the small side, so you can use less.

    How big are the onions supposed to be and what is the weight of the package of vegetarian beef? 4 onions seems like alot

    As alternative to puff pastry, Goya makes kosher empanada dough, sold in the freezer section in many supermarkets, often in the Latin foods section.

    These would be great for your vegetarian guests on Thanksgiving, they are lucky. You can use egg if you don’t need it to be vegan to seal the dough or water should be fine too. And they freeze beautifully so you can make them ahead and freeze or refrigerate and heat in the oven when ready to serve.

    This looks great! I’m going to make them for my vegetarian guests for
    Thanksgiving. I have two questions: what can I use instead of milk to
    seal the dough? Will water work? Need it to be non-dairy. Also, can
    the empanadas be made ahead and reheated on Thanksgiving? Thank you!
