Ingredients
- 2 cups quinoa
- 1 butternut squash, cut in small chunks
- 1 teaspoonsalt
- 1 teaspoon pepper
- 2 tablespoon olive oil
- 1/4 cup dried cranberries
- 1/4 cup chopped scallions
Dressing
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon of agave nectar
- Juice from half lemon
- 3 tablespoons olive oil
Preparation
1) Boil the quinoa according to the package directions and set aside.
2) Preheat oven to 400°F. Toss the butternut squash with olive oil, 1 teaspoon each of salt and pepper and roast for 30 to 35 minutes.
3) In a large bowl, mix together the quinoa, squash, cranberries, scallions and toss with the dressing.
