That’s why I created this Thanksgiving game plan — so you can actually enjoy the holiday (and your family!) instead of juggling timers and oven racks. With a little prep, you can make most of your sides days — or even weeks — in advance, freeing up your time and your oven for the big day.

Apple Date Challah Stuffing

This is one of those sides that tastes better after freezing. Assemble it (unbaked) a week or two ahead, cover tightly, and freeze. On Thanksgiving morning, bake straight from the freezer — it fills the house with that cozy, holiday aroma without taking up precious prep time.

Roasted Root Vegetables with Romesco

Root veggies are your secret weapon. They’re sturdy, forgiving, and reheat beautifully. Chop and store them raw in airtight containers or roast them 1–2 days before. On Thanksgiving Day, just warm them gently in the oven or toss them in a skillet with a drizzle of olive oil for a just-roasted taste. Make the romesco a few days before and store in the fridge.
Pureed Carrots

I love this simple, elegant side — a velvety carrot puree that feels fancy but couldn’t be easier. You can make it a few days ahead and reheat gently on the stove or even in a slow cooker while your turkey rests.

Garlic Mashed Potatoes

Classic, creamy, and totally make-ahead friendly! Prep and mash your potatoes the day before, then store them in a slow cooker insert in the fridge. On Thanksgiving Day, plug it in a few hours before serving — your mashed potatoes stay warm and fluffy without taking up oven space.
Best-Ever Gravy

Don’t wait until the turkey’s out of the oven to start the gravy panic! Make your gravy base or broth a day or two early, then reheat and whisk in your pan drippings right before serving. Smooth, rich, and absolutely stress-free.
My Thanksgiving/Holiday Hosting Tips
- Label everything! Masking tape + Sharpie = sanity saver.
- Freeze flat. Store sauces, soups, and purees in zip bags — they stack neatly.
- Reheat slowly. Low and slow keeps textures creamy and flavors intact.
- Make it pareve-friendly. Most of these sides are dairy-free, so they pair beautifully with your turkey and can be prepped separately from your meat dishes.
