Enter M&H Distillery (short for Milk & Honey), Israel’s first single malt whisky distillery. Tucked away in the industrial pulse of South Tel Aviv, this world-class operation stunned the spirits world in 2023 by taking home the ultimate title: World’s Best Single Malt at the World Whiskies Awards.
A Sprint to Greatness: The Mediterranean Advantage

In Scotland, whisky sits in cold, damp warehouses for decades, slowly interacting with the wood in what experts call a “maturation marathon.” In Israel, it’s a sprint.
Because of the intense Mediterranean heat and humidity, the “Angel’s Share”—the portion of whisky that evaporates from the cask—is a staggering 9% to 12% annually, compared to a traditional 2% in Scotland. This accelerated maturation means a three-year-old Israeli whisky often possesses the wisdom, deep color, and complexity of a 12-year-old Scotch.
From the Soil of Kibbutz Be’eri
Being a pioneer comes with challenges. For years, Israel didn’t produce its own malting barley, forcing M&H to rely on imports. However, following the events of October 7th, importing became logistically fraught and expensive.
In a powerful turn of fate, M&H connected with Kibbutz Be’eri, one of the communities bordering the Gaza Strip hit hardest by the attacks. The Kibbutz, home to a dedicated group of whisky enthusiasts, stepped up to the task of cultivating local barley. Since the beginning of 2025, M&H has been working exclusively with this homegrown grain—turning a story of tragedy into one of agricultural resilience and Israeli pride.

The Kosher Revolution: The Sherry Cask Breakthrough

For the observant connoisseur, the Sherry Cask has long been a “holy grail” that was difficult to reach. These casks produce rich, velvety flavors of dried fruit and dark chocolate, but because Sherry is a wine, it presents significant kashrut hurdles.
Since “Sherry” is a protected Designation of Origin in Spain, M&H couldn’t simply find a kosher substitute. Instead, they worked directly with a Spanish vineyard and the local Jewish community to ensure every step—from the grape harvest to the seasoning of the barrels—was overseen by Jews. The result? The Elements Sherry Cask, the first of its kind with a 100% kosher pedigree. It is a true game-changer for the kosher table.
A Taste of the Terrain: The Apex Series

Under the guidance of the late Dr. Jim Swan (famously known as the “Einstein of Whisky”), M&H launched its “Apex” series, which leans into Israel’s diverse geography. By aging casks in four unique climate zones, they have captured the literal “spirit” of the land:
- The Dead Sea: Brings a rich, salt-kissed intensity to the liquid.
- The Jerusalem Mountains: Offers a cleaner, more elegant profile.
- The Sea of Galilee & The Negev: Each provides a distinct body and character shaped by the local air.

M&H represents the “New Israel,” where ancient tradition and “Start-Up Nation” innovation intersect. It is sophisticated enough for a sleek Tel Aviv rooftop bar but grounded enough for a Friday night family dinner.
