Chocolate and coffee and go together like chocolate and vanilla. Coffee highlights the chocolate deep, rich flavor without imparting flavor of its own. There are many ways to get the coffee flavor, but my new favorite way is this Double Espresso Liqueur form Morad winery in Israel. They just started bringing in the Double Espresso, so look for it in your liquor store by you or ask them to get it for you. It is wonderful to sip over ice or to mix with a dairy milk based cocktail, but I am most excited about the way it pairs with chocolate.

When I first tasted this liqueur I knew I had to mix it up in a hot drink and a rich and creamy hot chocolate was the perfect choice. I made it with almond milk to keep it parve and keep the calories down a bit and topped with my homemade marshmallows for extra gooey goodness. But the best part was the liqueur and don’t worry about drinking it too late in the night, my theory is the alcohol counteracts any caffeine their might be.
DOUBLE ESPRESSO FUDGY BROWNIES

The real wow factor will come from these brownies. When my husband was eating the leftovers a couple of days after we served these bad boys he couldn’t help but declare how great they were, even when they were starting to go stale. I worked to keep the calories lighter here and even made them with whole wheat flour, although I think it would be a little less crumbly if you use regular all-purpose. They are non dairy of course so yo can make them any time, just make sure to add the liqeuer it really enhances the chocolate flavor.

I use sea salt in all recipes that call for salt, including desserts.
I like to use roasted garlic.
I sometimes substitute brown sugar for white in desserts.

Me too!! I have a huge jar of vanilla beans with vodka that I was topping off for a while, but I am moving this Summer so now I am just using all my vanilla beans. Will start a new jar when I move.

My mom has a recipe for honey cake that includes coffee and whiskey. I don’t know why those two things would be in honey cake but it’s delicious!
I like to make my own vanilla extract, it gives a much stronger and richer flavor.
I like to use grated lemon peel. Adds a bit of mystery and I also use a special coarse salt called Real Salt from Utah that really has Flavor!Kosher for Pesach also. A fully stocked spice drawer is my key to pleasure in cooking. Shallots also are a favorite.
Instead of water I use freshly made espresso in brownies, and add a touch of freshly ground coffee beans onto pumpkin and squash soups
Lots of spices, especially basil, chili powder and garlic
I add a splash of salted caramel agave syrup to my brownies or blondies and it is INSANELY yum!
My two favorite things to use are cinnamon and vanilla.

White chocolate
I LOVE to do a squirt of fresh lemon or lime as I put the meal on the table, it adds freshness.
Cinnamon is my go-to flavor addition – mainly for baked goods but I will try with some hot drinks
In addition to espresso powder I really like a bit of ground chipotle powder. Between 1/8 and 1/2 tsp depending on your tolerance for “heat”.
it depends what it is: nutmeg or cinnamon is great in small doses in a lot of things, not only sweet. I like to add coffee extract in any thing chocolate it’s also great in caramel as is a little extra vanilla.coconut cream is a great substitute for other liquids even in soup. I also like to add a dash of brandy or white wine to almost any thing.
I like to use a lot of garlic in my cooking.
I always substitute ing to make things healthier for ex. Whole wheat flour, oil instead of margarine, applesauce instead of oil, honey, stevia or coconut sugar instead of white sugar. I also love using spices and herbs. I have so many different ones in my spice cabinet. Everyone always comments on them
