Pesach Fingers

This great take-a-long snack couldn’t be easier to prepare! It’s a perfect alternative to macaroons and can be made with any ground nuts.

Cook Time 15 minutes mins

Servings

30 Servings

Ingredients

  • 2 six-ounce packages ground almonds
  • 1 cup sugar
  • 2 large eggs
  • Baking chocolate melted

Instructions

  • In a medium bowl, combine the almonds, sugar, and eggs. Refrigerate until hardened.
  • Preheat oven to 350⁰F. Line a baking sheet with parchment paper.
  • Remove from refrigerator and roll into short, thin strips of dough and place on baking sheet. Bake for 15 minutes.
  • Remove from oven and let cool. Dip one end into melted chocolate.

    I’m here to tell everyone that using Almond Flour is a no no. The color and the consistency is way off. I will try to grind the almonds with my food processor by pulsing.

    So you start with something like the size of a golf ball and roll it out into a rope? I found this under Pesach desserts that freeze well. I hope so because my sisterhood asked me for cookies that freeze well as I won’t be here during Pesach.

    Yes use your hands to roll the dough, I would estimate it’s about the size of a golf ball

    When you instruct us to “roll” the dough, am I correct that we should use our hands? If so, it might be helpful to indicate the amount of dough (e.g. 1-1/2″ in diameter? or the size of a golf ball?) to gather to make each finger.

    Made a double batch of these yesterday for Passover tonight. There are none left!! Great recipe – easy to make. I am going to try and make them with a sugar substitute and see how that goes.

    I can’t seem to find ground almonds without having to order a huge quantity that I don’t need. Can I use almond meal? I may just have to find a bag of almonds and process them myself being careful not to make almond butter.

      Almond meal is the same thing as ground almonds, it might be a little finer but it works great in these cookies. I also like to try ground hazelnuts and ground walnuts to make 3 different kinds.

    That is a great question, I make these every year, but no matter how much I make never have any left to freeze. That being said I don’t see why they wouldn’t freeze well.

    I believe these would work with almost any nut, but I can’t imagine them without any since they are the main ingredient.

    I have to say I wouldn’t recommend it, I make these every year, but I think they need that bit of texture that the flour wouldn’t give.

    No, the eggs pull it all together and the nuts have fat in them too so it works, I did use my hands to mix it together, was difficult with a spoon.

    I love these easy cookies. I made them with ground hazelnuts because that is what I found at the store and they were so good, the hit of the meal. It is a joke how easy they are.
