This is a delicious gorgeous blend of two healthy root vegetables.

Ingredients

  • 2 large beets peeld and cut into chunks
  • 11/2 tablespoons olive oil
  • 1 Teaspoon garlic powder
  • 1 teaspoon coarse salt
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon brown sugar
  • 2 medium sweet potatoes cut into chunks
  • 1 large sweet onion sliced

Instructions

Preparation

  • 1 Preheat oven to 400°F. 2 In a bowl, toss the beets with 1/2 tablespoon oil to coat. Spread on a baking sheet in a singer layer. 3 Mix the remaining oil with the garlic powder, salt, pepper and brown sugar in a large ziploc bag. Place sweet potates and onion in the bag, seal and shake to coat vegetables. 4 Bake beets for 15 minutes in the preheated oven. Mix sweet potatoes with the beets onto the baking sheet. Bake for 45 minutes, stirring halfway through. It is ready when all the vegetables are tender.

    Yes you are right about that. We did enjoy them and I don’t usually include beets.

    I hear that, but sometimes the idea of roasting different vegetables and different combos they hadn’t thought of is what someone gets out of the recipe and some people need everything written out for them. Glad you enjoyed.

    This was very good but I felt I did not need a recipe for this. I could has just as easily thrown it together my self.

    Sounds yummy. I roast nearly every vegetable during winter. Little prep and you can concentrate on the main dish while they happily roast to perfection!
