I love this recipe because it is super easy to prepare. All you need is a bowl and a mixing spoon. Almost anyone can make this cake, guaranteed. It is a great recipe for kids, or anyone who is intimidated by baking.

Apple Honey Cake

Ingredients

  • Nonstick cooking spray such as PAM
  • ½ cup oil
  • ½ cup orange juice
  • 2 eggs
  • 1 cup honey
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon instant coffee dissolved in 1 teaspoon boiling hot water
  • 1¾ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger
  • 1 cup cubed or shredded apples optional
  • Pinch of salt

Instructions

  • Preheat oven to 350°F.
  • Spray a 10-inch loaf pan or 9-x13-inch pan with nonstick cooking spray.
  • In a large mixing bowl, combine the oil, juice, eggs, honey, vanilla, and coffee.
  • In a medium mixing bowl, mix together the flour, baking soda and spices.
  • Combine the baking soda and spices with the flour and then stir the flour into the batter until thoroughly mixed.
  • Fold in the apples.
  • Pour batter into pan. Bake for forty minutes, or until golden brown and a toothpick inserted in the center comes out clean.

    I LOVE honey cake and this recipe was outstandingly good. The bits of apple gave it an interesting added texture and surprise. Moist and yummy!

    not everyone likes ginger, it can totally be replaced with nutmeg.

    Made this Apple Honey Cake gluten free.
    Used Trader Joe’s Gluten Free flour (Whole Grain Brown Rice Flour, Potato Starch, Rice flour, tapioca flour) in place of the wheat flour.
    Added 1 1/4 tsp Xanthan gum & also the apple.
    Let it sit in the bowl for 30 minutes before transferring to baking pan. This seems to work for me, the gf flour hydrates better. Baked for 30 minutes. Wonderful, very moist.
    Will not last long when the girls get home!

    This was so incredibly yummy!! Left out the apples this time, only because there weren’t any 😉 and did it in cupcake tins, which was so yummy for a little breakfast on the run, or snack in the afternoon. Definitely will be making this again!

    Yes a loaf pan does work better but it comes out in a 9×13 too

    This was a fun afternoon for my almost 4-year-old son! We baked together, and he really loves having a piece for dessert/snack. I found that 40 minutes was a little too long for a 9×13 pan, but now I know for next time. Maybe a loaf pan would be better? Instead of cinnamon, nutmeg, etc, I substituted an apple pie spice. We also omitted apples because I didn’t have time to cut them up. Thanks for the recipe idea!

      It was delicious! Moist and fluffy. My husband liked that it was not too sweet and he loved the salt!

    Made these as muffins, baked 25 minutes and the kids enjoy taking them as snacks for school!
    I used one macintosh apple grated, and liked that the recipe isn’t too sweet.

    I made this cake for shabbas. I left out the nutmeg and ginger and added the apples. I thought it had amazing flavor and was very moist. I think it only needed 35 min. cooking time at least in my oven. Some of my guests were not fans of it because it was a very distinct flavor and either it was your taste or not your taste. (i happen to have loved it)

    Loved making this easy and moist cake. Followed the directions as stated and wow! Served it for Shabbat and it is almost all gone. Can’t wait to make it again.

    I just made this with my 7 year old for Shabbat. We substituted allspice for nutmeg and cinnamon sugar for cinnamon because that’s what I had in my pantry. Also, I used a cup of mashed bananas instead of apples. Hoping for yummy results. Will update after Shabbat!

    Thanks for the recipe. I couldn’t eat in because I am celiac and diabetic but my kids happily taste tested. The only complaint they had was the ginger. Personally I would use nutmeg instead. To make it fluffier separate the eggs and beat until stiff peaks and then fold them back in. Also if you cut the apples on the short side first then it will be easier to dice them. I baked them in muffin pans for 20 minutes. Gut shabbas

    I made this cake last night and it got rave reviews from my kids! Aside from the fact that they were just excited that I wasn’t saving it for Shabbos (like I do with most of the things I bake on a Thursday :-P) they just couldn’t get enough. I only used 3/4 of a cup of honey (cuz that was all I had),Spring Apple-Cactus juice (cuz we had no OJ) added a little more cinnamon (cuz we LOVE cinnamon around here) and a quarter teaspoon of allspice. I also threw in a teaspoon of baking powder (b/cuz any cake recipe that doesn’t call for it makes me nervous)and 4 chopped up MacIntosh apples and it was super moist and totally delicious. The kids have already asked for a repeat performance next week! G’Shabbos!

    I made this recipe as muffins. They were light and delicious. The flavor combination is great for fall. I would definately make these again!

    I made this cake without the nutmeg (due to family allergies) and using 1 cup of grated apple. The cake came out fine, though it was a little bit too ginger-y for an apple and honey cake. It was definitely easy to make but I thought it was just average in taste.

    This cake was easy to make in no time at all. I followed the recipe exactly. I baked it in a loaf pan. The cake browned beautifully on top but was a bit too mushy in the middle at the end of baking time. Next time I will cover it loosely with foil and bake it for an extra 5 minutes. Delicious and easy cake to prepare!

    This was the best of both worlds… apple and honey cakes. I use white whole wheat flour, which absorbs more moisture than white flour. The 40 min time was just right in my oven. The cake came out moist and was tasty.

    hi!! my family loves honey cake. i tried it with the apples. however, instead of making it in a 9×13 pan, i made it in muffin tins!! my family couldnt stop eating them!!!

    I just finished making it was so easy and fast I didn’t have a 10 in loaf pan handy something else was in it so I used 2 foil pans and being that I was doing it tjay way I decided to make one with apple I used only 1/2 apple and one without theu wete both really good. Can’t decide which I like better.

    The texture comes out really good when using the recipe, once you replace things it may or may not work :). It sounds like with a little more time in the oven it would be a little dryer

    Made this recipe with my 3 year old daughter. It was fun and easy! We measured the oil, OJ, and honey in the same large measuring cup so had a little added science lesson after we watched them settle. I mixed in apple chunks- I used 1 1/2 apples and sprinkled the top with cinnamon and sugar. Cake came out moist and delicious!

    My oldest son let us know this afternoon that he would be home from the navy this evening, so I wanted to quickly bake a cake. This was easy to make and the ingredients are the sort that are normally available in most kitchens. I used mainly wholemeal flour since with this sort of recipe you can’t tell the difference. I also substituted half the honey with silan as my family don’t like a strong honey flavour. I used three teaspoons of espresso instead of the instant coffee. As I don’t have a large loaf pan I made it in two small ones, but I think I could have put all the mixture in one after all. I added one grated apple. This cake came out tasting good, but I didn’t like the texture so much as it was a little mushy. I baked it for 45 mins, maybe it should have had longer in the oven.
