Broccoli and Walnut Pasta


I like to make this with Orecchiette, but any past will do.

  • 1 box Orecchiette or fusili
  • 1 1/2 cups broccoli florets
  • 1/2 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, chopped
  • Salt and pepper to taste
  • 1/4 cup freshly grated Parmesan or Pecorino


1 Preheat the oven to 400ºF. Cook the past according to package directions. Drain, reserving 1 cup liquid and retun pasta to pot.
2 On a rimmed baking sheet mix the broccoli, walnuts, oil, garlic, salt and pepper. Roast for about 20 minutes until the broccoli is tender.
3 Add the broccoli mixture to the pasta in the pot and mix together adding reserved cooking liquid as needed. Sprinkle with cheese.
