I recently boughtt a chocolate granola and realized how much I loved it. Now granola is a healthy food, but it is not low in calories and so I do my best to limit sugar and oil, but know that it is still to be enjoyed in small quantities. I usually mix a lot of fruit with a little yogurt and even less granola and it is perfect. This recipe can be modified so you can include coconut or leave it out, use almonds or any other nut, whatever you want.

Ingredients

  • 4 cup rolled oats
  • 1 cup shredded coconut
  • 1/2 cup flax seeds
  • 1 cup sliced almonds
  • 1/2 teaspoon salt
  • 1/2 cup cocoa powder
  • 1/3 cup melted coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/3 cup maple sryup or agave
  • 1/4 cup brown sugar
  • 1/4 cup chocolate chips

Instructions

  • Preheat oven to 325 degrees.
  • In a large bowl, stir together the oats, coconut, flax seeds, and nuts and salt.
  • In a medium bowl, whisk together the cocoa, coconut oil, vanilla, maple syrup, and brown sugar until smooth. Pour chocolate mixture over the oat mixture in the large bowl and stir until all the oats are coated.
  • Line a baking sheet with parchment paper and distribute granola evenly on the pan.  Bake for 15 minutes.
  • Remove from oven, then stir and bake another 15 minutes.
  • Remove from oven again and sprinkle on the choc, stir gently and then allow to cool completely.
  • Once cooled completely. Store in an airtight container.

    You can use butter or Earth Balance margarine.
