Inspired by the viral trend, these potatoes are baked with a golden crust of butter, garlic, and Parmesan. The key to their perfection is slicing the inside of the potatoes into a diamond pattern and pressing them cut-side down onto a layer of cheesy goodness before roasting.

Crispy Parmesan Potatoes

- 1 pound mini Yukon gold potatoes halved
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ¼ cup unsalted butter melted
- 1 ½ cups freshly grated Parmesan cheese
Instructions
- Preheat oven to 425°F (220°C).
- Wash potatoes and cut them in half. Using a sharp knife, score them into a diamond shape.
- Toss potatoes with olive oil, Italian seasoning, garlic powder, salt, and pepper. Set aside.
- In a bowl, mix grated Parmesan with melted butter until a thick paste forms.
- Spread the Parmesan mixture evenly onto a large baking dish.
- Press each potato half, cut-side down, into the cheese mixture.
- Bake for 25-26 minutes until golden and crispy.
- Remove from the oven and let rest for 10 minutes to allow the cheese to harden.
- Use a spatula if needed to remove from the pan, break into pieces, and enjoy!
