Date Energy Bites 4 Ways
These date energy balls with 4 different flavor profiles are the perfect snack as you hike across gorgeous Israeli trails, through the Golan Heights or in the Arava desert down to the Dead Sea.

Ingredients
Baklava
- ⅓ cup pistachios
- ⅓ cup walnuts
- 8 dates, chopped
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
Cheesecake
- 2 sheets matzah
- 8 dates, chopped
- 7 ounces cream cheese
- 1 teaspoon vanilla
Tiramisu
- 1 cup almonds
- 8 dates, chopped
- 1 tablespoon cocoa powder
- 1 tablespoon strong coffee
- 1 tablespoon of rum (or water for an alcohol-free version)
Choco-Coco
- ⅓ cup pistachios
- 3.5 ounces semi-sweet chocolate
- 8 dates, chopped
- 1 tablespoon milk
- Shredded coconut
Preparation
BAKLAVA
- For the Baklava energy balls, add the pistachios and walnuts to a food processor. Grind to small pieces.
- Add the dates, cinnamon and lemon juice. Process again until the small bits come together into a paste.
- Scoop out tablespoon sized pieces and roll into balls.
- Place on a sheet and chill for 30 minutes.
- Store in the freezer.
CHEESECAKE
- For the Cheesecake energy balls, add the matzah to your food processor and grind to a fine powder.
- Add the dates, cream cheese and vanilla. Process again until the small bits come together into a paste.
- Scoop out tablespoon sized pieces and roll into balls.
- Place on a sheet and chill for 30 minutes.
- Store in the freezer.
TIRAMISU
- For the Tiramisu energy balls, add the almonds to your food processor and grind to a fine powder.
- Scoop out 3 tablespoons of almonds and set aside.
- Add the dates, cocoa powder, coffee and rum. Process again until the small bits come together into a paste.
- Scoop out tablespoon sized pieces and roll into balls.
- Roll in the chopped almonds that were set aside to coat.
- Place on a sheet and chill for 30 minutes.
- Store in the freezer.
CHOCO-COCO
- For the Choco-Coco energy balls, add the pistachios and chocolate to your food processor and grind to small pieces.
- Add the dates and milk. Process again until the small bits come together into a paste.
- Scoop out tablespoon sized pieces and roll into balls.
- Roll in the shredded coconut.
- Place on a sheet and chill for 30 minutes.
- Store in the freezer.
