Eggplant Appetizer

  • 1 eggplant, diced small
  • 1 onion, finely sliced
  • 1 Clove garlic, minced
  • 1/4 cup olive oil
  • 1 tbsp. balsamic vinegar
  • Salt and pepper to taste



1 Sprinkle eggplant with coarse salt and let sit for about an hour. Rinse and drain eggplant.
2 Heat oil in large pan, add onion and garlic, saute until fragrant.
3 Add eggplant to the pan and saute until browned. Add balsamic vinegar and toss.
