The Cooling Rule: This is non-negotiable. Let it sit for at least 10 minutes before peeling. It “sets” and becomes pliable, like a tortilla.
Grease the Paper: Even though it’s parchment, cottage cheese loves to stick. A quick spritz of oil ensures a clean peel.

Ingredients
- 1 cup cottage cheese 250g
- 2 eggs
- 1 cup fresh spinach or basil packed
- Pinch of salt optional
- Garlic powder or dried oregano to taste
Instructions
- Preheat oven to 350°F (180°C). Line a quarter-sheet pan (9×13) with parchment paper.
- Combine all ingredients in a blender and process until smooth.
- Pour onto the parchment and spread into a rectangle. Aim for a consistent thickness.
