Pomegranate, Apple and Date Salad
Besides being easy, this salad is chock-full of symbolism. In addition to apples and honey, the pomegranate is another popular symbol especially around Rosh Hashanah. Since it is the New Year, we eat a new fruit that is recently in season. Also, the seeds of a pomegranate are compared to the numerous commandments in the Torah.

Ingredients
Dressing:
- 1 garlic clove, minced
- 1 lemon, juiced
- 1½ tablespoons honey
- 3 tablespoons red wine vinegar
- 1½ teaspoons salt
- ½ teaspoons black pepper
- ½ cup extra-virgin olive oil
Salad:
- 6-8 cups arugula
- ½ red onion, sliced thin
- 1 apple, cut into slices (Red Delicious or Fuji work great)
- 4 dates, diced
- 8-ounces Gorgonzola cheese (optional)
- 1 pomegranate, seeds removed
- ¼ cup walnuts
Preparation
Dressing:
1. In a small bowl, whisk up minced garlic, lemon juice, honey, red wine vinegar, salt and pepper.
2. Slowly drizzle olive oil into mixture while whisking.
Salad:
1. Put red onions with arugula in a bowl and pour in about ¾ of dressing. Toss with tongs. Reserve the rest of dressing for drizzling.
2. Put a pile of arugula on 4 plates.
3. Top each with apple slices.
4. Sprinkle on dates, Gorgonzola cheese, pomegranate seeds and walnuts.
5. Drizzle with more dressing, and serve!
