- Simmer over medium heat until pomegranate juice has reduced by ⅔ and is a syrupy consistency.

I am not sure that is a fail. The viscosity should be like molasses…so very thick!! Taste it and it should be tangy and sweet.
If it is like that you can store it for months in the refrigerator.

My attempt to make molasses failed, while i was waiting for juice to reduce in volume it became too thick. I wondered if i can just use the pomegranate concentrate and mix it with a bit of honey? What do you think? I am trying to use the molasses for the salmon recipe in the current issue of the magazine for Rosh Hashanah.
