This is a really simple recipe, but I wanted to share it just to give you the idea of pairing grapefruit and goat cheese in a salad. I read about it somewhere and was amazed on how good the combo is. Keep the dressing simple as I have here and you can add avocado and/or any kind of nut if you want, I liked it with pecans, but really anything goes.

- 1 grapefruit
- 2 teaspoons white wine vinegar
- pinch of coarse salt
- 1 tablespoon extra virgin olive oil or other flavorful salad oil
- 1 head Romaine lettuice, chopped
- 3 ounces Natural & Kosher goat cheese,
- Black pepper
- Pecans, plain or candied
1 Before peeling the grapefruit, zest about one-quarter of the rind with a grater or zester (you should have about 1 teaspoon finely grated zest). Set aside.
2 Peel and cut the grapefruit into segments. Using a sharp knife, slice off both ends. Carefully slice downward, following the shape of the fruit to remove remaining rind and all pith. Cut out slices going around the grapefruit. Squeeze the remaining juice into the bowl of zest.
3 To the bowl add vinegar and salt and whisk in oil.
4 Prepare lettuce and place each portion on a plate. Top with grapefruit and sprinkle with goat cheese. Drizzle over dressing and fresh ground black pepper if desired. Top with plain or candied pecans. Enjoy
