Spiced Rubbed Salmon With Pineapple Salsa

The fresh fruit salsa made from a delicious combination of pineapple and kiwi pairs perfectly with the flavorful salmon in this recipe.

For Salsa:

  • 1 cup fresh diced pineapple
  • 1 cup diced kiwi (about 2)
  • 1/4 cup minced red onion
  • 1/4 cup minced fresh cilantro
  • 2 teaspoons sugar
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon kosher salt

For Salmon:

  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander seeds
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 2 teaspoon olive oil
  • 1 pound salmon fillets


1. Prepare the salsa. In a bowl, combine all the ingredients. Cover and refrigerate while you prepare the salsa.

2. Preheat the oven to 400 degrees. Line a baking sheet with foil. Add the coriander and cumin seeds to a small skillet. Toast over medium heat until fragrant, about 2-3 minutes. Place the cumin and coriander seeds into a spice or coffee grinder. Process until the seeds are ground. Combine the ground seeds with the broken sugar, chili powder, salt, and cinnamon.

3. Rub the salmon filets with the olive oil and then rub on the spice mixture. Place the salmon on the prepared pan. Roast the salmon for about 10 minutes or until cooked through to your liking. Serve the salmon with the salsa.
