These gluten free Spinach Almond Croutons could be enjoyed as a snack or on top of salads and soups. Get an extra does of nutrients with these croutons.

- 1 teaspoon oil
- 2 cups fresh spinach
- 1 clove garlic, chopped
- Salt to taste
- 1/3 cup finely ground almonds
Heat pan over medium high heat add teaspoon of oil. Add spinach and garlic and sauté until spinach is wilted. Add salt to taste. Put in a food processor or blender and pulse until finely chopped. Mix with ground almonds and spread on a parchment lined small baking tray.
Bake in 350 degree oven for 25 minutes. Remove from oven and cut into small squares with a knife without removing from parchment. Put back in oven, bring temperature down to 200 degrees and cook for 60-90 minutes until crispy.
Eat on top of salads or in soups, would go well in carrot soup or just as a snack.
Makes ¾ cup small croutons
