The Ultimate Cottage Cheese Gluten Free Rolls

- 1 cup cottage cheese (250g)
- 2 eggs
- 1 ½ cups almond meal (170g)
- ½ cup potato starch (100g)
- 1 tablespoon baking powder
- ½ teaspoon salt
- Optional: Everything Bagel spice or sesame seeds for topping
Instructions
- Preheat oven to 375°F (190°C) and line a tray with parchment paper.
- In a food processor, blend the cottage cheese and eggs until completely smooth.
- In a bowl, whisk together almond meal, potato starch, baking powder, and salt.
- Fold the wet ingredients into the dry until a sticky dough forms.
- With wet hands or a large ice cream scoop divide the dough into 6-8 balls. Place on the tray and poke a hole in the center of each with your finger.
- Sprinkle with toppings if desired and bake for 20-25 minutes until golden brown and firm.











I made them today – they taste very good and the texture is bread-like, but they came out almost completely flat. I’m going to use them as individual Pesach pizza crusts. I followed the recipe to the letter. It yielded six rolls when I out them on the parchment paper. What would have gone wrong that they didn’t come out like rolls? I’m thinking may to add another 1/2 cup of potato starch if I try them again.
You used the baking powder too? I know some don’t like using it on Passover even though they sell kosher for passover versions. I haven’t had an issue with them being flat so not sure why.

My food processor is parve. Is there another way to do this that doesn’t require milchiging the food processor?
If you have a blender that works. If you simply whisk it might be fine but you will see small curds.
Is there an alternative for the almond meal?
I am sure you can use other gluten free flours, but I didn’t test anything else so I am not sure how and what will work. It also depends on if you want them to be gluten free.
