Try a little extra flavor in your mashed potatoes, horseradish goes with everything, but Japanese horseradish goes particularly well with Meatloaf!!

- 6 medium Yukon gold potatoes, peeled and quartered
- 2 cloves garlic
- 1 tablespoon kosher salt
- ¼ cup vegetable broth
- 4 tablespoons vegan butter
- 2 tablespoons wasabi horseradish
1 In a large saucepan, boil potatoes and garlic in salted water. Cook for 15 to 20 minutes or until potatoes are tender and break apart with a fork. Drain and return to pan.
2 With a potato masher or hand mixer, mash potatoes and garlic with broth, vegan butter, and horseradish. Season with additional salt, if desired.
Serve with Individual Meatloaves as pictured.
