A Unique Méditerranéen Pizza

It’s hard to remember when I first heard about Chef Zissie but I think it was on my friends Melinda’s Kitchen-Tested Blog back in December of 2012. But as is my style, when I see a good thing I just don’t forget it.

I met Zissie a few years later at KFWE and she told me she was planning to make aliyah. So we promised to meet up on this side of the pond when she arrived. We kept true to our word and met at a bagel shop in Beit Shemesh which was like a little lunch love fest and decided we just had to collaborate.

Over here we were already planning to shoot an Easy and Perfect Pizza Dough Recipe Video  at the request of one of our community members. At the same time we were in the throes of recipe development for Sabra Mediterranean Salads. So I threw Chef Zissie a curve ball and asked if she thought she could come up with an incredibly delicious, out-of-the-box, pizza topping featuring one of the Sabra Salads. I gave her a sample of each of the following fresh Mediterranean salads to try: Roasted Eggplant, Caponata, Babganoush, Grilled Eggplant, Moroccan Matbucha, Spanish Eggplant and Turkish Salad to get creative with. (Man do I love delegation!)

I just new Chef Zissie had it in her and boy she did not disappoint. But when she first sent me her idea I was like “WHAT?!” I questioned her on everything. “You picked Roasted Eggplant, not Turkish?” I asked “You want to go with Brie, not Feta?” I pushed “What about skipping the cheese altogether and doing a meat pizza?” I suggested. She said “no – this pizza is it!”

Well Chef Zissie was right. This is the most unexpected most divine, most beautiful marriage of flavors I have ever enJOYed on a pizza: smoky Roasted Eggplant, creamy brie, spicy jalapenos, refreshing mint and sweet peppery basil. Don’t trust me, I beg you, you absolutely MUST try it for yourself.

    My favorite two toppings have been slices of eggplant and slices of fresh tomato! This new recipe sounds amazing especially as I love brie (and eggplant of course). My family and I don’t do spicy, so I’ll just leave the jalapeños out!

    I love my veggies and anything sweet, so my favorite combo is spinach, broccoli, & mushrooms, with pineapple sprinkled on for the sweet. I’ll probably add in some of these toppings when I try out this recipe!

    Felafel and hummus pizza — the was a restaurant near here that served this — unfortunately they recently closed.

    The other one was called a Scandinavian Pizza and consisted of smoked salmon, red onions, sour cream, capers, parsley and dill. Yummy.

    Hmm, well I am not a big fan of hummus + cheese so I would go with Turkish Salad, or Salsa or Bruschetta or Matbucha before hummus. Good Luck!

    I’m allergic to dairy and soy so I use : hummus and a small amount of tomato sauce topped with fried onions, garlic and mushrooms. some times I also add eggplant and olives as well.

    Where I live there are just not many places who serve much beyond the standards and am never happy with what I make. My favorite pizza is BBQ chicken.

    One of my specialties is Mexican Pizza. I start with a layer of peach salsa instead of tomato sauce on top of the crust … add shredded cheddar and jack … strategically decorate with sliced olives, mushrooms, and jalapeños … and, when all baked, top with freshly-made guacamole. It never fails to satisfy. 🙂

    I didn’t make this pizza, but my dad felt we needed to try a pastrami pizza when a local restaurant started offering it. It had pastrami and pickles just like a sandwich. It was definitely not my cup of tea, but very different and interesting experience.

    I saute a huge yellow onion, one large bell pepper (any color) and about 12 oz. of fresh mushrooms, all sliced thinly plus a generous tablespoon of minced garlic (added late to avoid burning). I sauté them all until the onion is caramelized and maybe a bit of char appears on the pepper. It reduces the water and concentrates the flavor and sugar of the onion. The initial volume in the pan is huge, but by the time it is done, it is just right for a large pizza. Make my own sauce. Generous amount of mozzarella and parmesan, drizzle with EVOO and sprinkle with oregano and basil.

    I love making “white” pizza. Mozzzarella, crushed garlic and dollops of cream cheese. Sounds strange with the cream cheese, but try it, it’s amazing! Occasionally I’ll throw fresh spinach on that too.
