When the temperatures climb, our instinct is to reach for something light and refreshing. Usually, that means salad. And while I love a good crunch as much as the next person, sometimes you just need a “real” meal that doesn’t involve a bowl of leaves.

The challenge? Finding a lunch that feels light enough for a humid July day but satisfying enough to keep you from raiding the snack cabinet at 3:00 PM. These recipes are my favorite summer solutions. They swap the lettuce for high-fiber grains, chilled proteins, and vibrant veggies, giving you a healthy, energized boost to power through your summer afternoons.
