Imitation Crab Cakes

A little sidetrack from the standard fare, imitation crab cakes are easy to make and can be a filling main course or, made smaller, can be served as hors devours.

Ingredients

  • 3 tablespoons mayonnaise
  • 1 teaspoon seafood seasonings
  • 1 tablespoon Worcestershire
  • 2 teaspoons lemon juice
  • 2 teaspoon mustard
  • 1 egg
  • 2 tablespoons chopped parsley
  • 1 pound imitation crab meat
  • 1 cup bread crumbs
  • Olive oil

Instructions

  • In a bowl, combine  mayonnaise, seafood seasoning, Worcestershire sauce, lemon juice, mustard, egg and parsley. Mix well.
  • Add imitation crab to mixture and gently mix. 
  • Blend in bread crumbs.
  • Cover and refrigerate for an hour. 
  • Shape into patties and saute gentle in olive oil (thin layer).
  • Tip: The imitation crab cakes are easier to handle if mixture is allowed to chill before forming.

    A small point, but the egg is mentioned in the ingredients but not in the directions.

    I have seen two brands that are kosher. the one I prefer is DynaSea. Maybe you can contact them to find out where they sell it in your area http://dyna-sea.com/?option=com_content&view=article&id=5&Itemid=3

    I have been looking for and cannot find imitation crab that is kosher. Every package I read says it has crab or lobster in the ingredients. Is there a specific brand that is kosher?
