In Parsha Korach, Aaron’s staff sprouting almonds serves as a beautiful image conveying Hashem’s selection of the Priestly class. As a tribute to Aaron, our menu this week celebrates the almond in both savory and sweet ways.
Luckily, almonds have a ton to celebrate from a health perspective, too. They are packed with heart-healthy monounsaturated fats, fiber, plant-based protein, magnesium, and antioxidant-rich Vitamin E. While they are calorie-dense, research shows our bodies don’t actually absorb all of those calories, and because they are so incredibly satiating, they make the perfect nutritious crunch to add to our joyful Shabbat table!

We are starting the meal with a simple, clever upgrade to a standard loaf of frozen gefilte fish. By baking it with a generous ribbon of fresh spinach mixed right in, you get a beautiful color contrast, a boost of iron and vitamins, and a wonderful flavor lift that makes the fish feel entirely homemade.

This dish is the jewel of our “Almond Joy” theme. It’s a slow-cooked, aromatic Moroccan chicken loaded with sweet dried apricots and finished with a heavy hand of toasted, slivered almonds for that perfect, satisfying crunch. The contrast between the tender, savory chicken, the jammy fruit, and the nutty almonds is spectacular.

To balance the sweetness of the Moroccan chicken, we’re serving a savory, veggie-packed fire-roasted tabbouli.
If you want to keep things even simpler, you can serve plain bulgur wheat or couscous alongside a quick pan of simply sautéed zucchini to soak up the delicious apricot chicken juices.

We’re ending the night by leaning fully into the fun side of our theme. These homemade truffles give you that iconic, nostalgic “Almond Joy” flavor profile—rich chocolate, sweet shredded coconut, and a whole almond hidden inside. They are bite-sized perfection and a sweet tribute to Aaron’s blossoming staff.
