One pot ptitim - Jewlish

We love the Ptitim, pearled couscous, popular amongst all Israelis, particularly the children.  This is the best way to cook it up, feel free to change up the additions for you personal preference.

One Pot Garlicky Ptitim

Ingredients

  • 2 tablespoons butter
  • ¼ cup extra virgin olive oil
  • 4 cloves garlic sliced
  • ¼ teaspoon crushed chili peppers
  • 2 cups ptitim Israeli couscous/pearl couscous
  • 2 ¼ cups water
  • 1 cup cherry tomatoes halved
  • 2 cups spinach
  • 1 cup parmesan shredded
  • Kosher salt and freshly cracked black pepper to taste
  • Garnish: chopped parsley

Instructions

  • Add the butter, evoo, garlic and crushed chili peppers to a pot on medium heat. Stir and cook for 2 minutes until fragrant.
  • Add the ptitim and stir. Fry the ptitim for 1-2 minutes until it begins to look golden.
  • Add the water and stir. Cover and turn the heat down to medium-low. Simmer for 12 minutes, stirring occasionally.
  • Remove from heat and add the tomatoes, spinach, parmesan, salt and pepper. Mix.
  • Garnish with chopped parsley and extra parmesan.
