Let’s Get Crazy With These Delicious Rainbow Latkes!  You can make these for Hanukkah or for Parsha noah, or whenever you want a little rainbow your life. 

This is how you doctor up a potato latke mix, with natural food colorings you have quick and easy, special for you latkes from a mix.

Ingredients

  • 2 eggs
  • 2¼  cup water
  • 1 box Potato Pancake Mix
  • oil for frying
  • 1 teaspoon turmeric
  • ½  cup spinach chopped
  • ½  cup beets chopped
  • ½  cup red cabbage chopped
  • pinch of baking soda
  • 1 tablespoon water

Instructions

  • Prepare the potato pancake mix according to the instructions on the box.
  • Separate the mixture into four even amounts.
  • Mix the natural colorings into each mixture. For the blue color, microwave the mixture for 15 seconds.
  • Add oil to a large frying pan on medium heat. Add a spoonful of each mixture to the pan and press down into a disk. Cook until golden on both sides.
