Ingredients

  • DOUGH:
  • 9 whole graham crackers 1 sleeve
  • 1 1/4 cups all-purpose flour
  • 1 tsp fine salt
  • 2 sticks 8 oz. cold unsalted margarine, cut into 1/2 inch cubes
  • 2 egg yolks
  • 1/4 cup soy milk not nonfat
  • TO ASSEMBLE TARTS:
  • Flour for rolling the dough
  • 1 egg
  • 1 tsp water
  • 1 cup or more marshmallow creme
  • TOPPING:
  • 6 oz. chocolate chips

Preparation

  • 1 Place the graham crackers in a plastic bag, press the air out, and roll out the crackers until fine using a rolling pin. You should have around 1 1/4 cups of fine uniform crumbs. Add the crumbs to a bowl with the flour and salt and whisk together.2 Add the cold margarine to the graham cracker mixture and, using your hands or a pastry blender, tossed until well coated. Cut the butter into the dry mixture until reduced to pea-size pieces.3 Separately, whisk the egg and milk together and add to the butter mixture. Then mix everything together until a sticky dough is formed. 4 Divide the dough into 2 equal portions and wrap each tightly in plastic wrap and refrigerated for at least 2 hours. You can make the dough up to a day ahead of time so you can just pop the dough out of the fridge when you are ready to bake.5 When you are ready to assemble the pop tarts, take the dough out of the fridge and left it on the counter for 10 minutes. In the meantime, turn the oven to 375 degrees and line a baking sheet with parchment paper and set it aside.6 Lightly dust a cutting board or counter with flour and roll one portion out into a rough 12 by 10 inch rectangle. Tip: flour the rolling pin often so it doesn”t stick. Trim the dough to a 10 1/2 by 9 inch rectangle using a ruler and a sharp knife. 7 Cut the dough into 6 equal rectangles (each about 3 1/2 wide by 4 1/2 inches tall). Using a flat spatula, transfer the rectangles to the prepared baking sheet and place it in the fridge. 8 Whisk the egg and water together and set aside. Roll out the second ball of dough using the same dimensions as the first, then trim and cut into 6 pieces.9 Pull the baking sheet out of the fridge. Brushed the egg wash over the refrigerated dough rectangles and spread 2 heaping tablespoons of marshmallow creme in the center. Place a non-chilled rectangle over the top and press down the sides then press down the marshmallow a bit to flatten.10 Using a fork dipped in flour, crimp the edges of the tart, cut an X in the center, then place in the fridge for 15 minutes. Bake until golden brown, around 20 minutes. Melt chocolate in the microwave then spread on tarts. Eat warm or room temperature.
