This may not be totally authentic pakora, but it is really good. One of my kids favorite snacks or side dishes, this Spinach Pakora is a hit every time. Pakora is an Indian appetizer made by mixing vegetables with chickpea flour, the flour gets sticky when mixed with water so there is no need to add egg, that is how it is naturally gluten free and vegan. It is usually deep fried, but I make them into little patties so I can pan fry them. Give it a try, you won’t be sorry.

Spinach Pakora

Ingredients
- 2 cups chopped fresh spinach
- 1 onion finely chopped
- 2 cloves garlic minced
- 1/2 cup gram flour chickpea flour or besan
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 green chili optional
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 cup oil for frying
Instructions
- 1 Mix all ingredients except the oil in a bowl, add just enough water to moisten. The batter should turn sticky.
- 2 Heat frying pan with oil over high heat. Spoon tablespoonfuls of the batter into the hot oil, flatten with fork. When browned, flip over and cook the other side until brown. Remove to a plate covered with paper towels.3 Serve pakora with chutney of choice. Pictured here with a tamarind sauce, just take tamarind paste and mix with water to achieve desired consistency and flavor, add a teaspoon of ketchup, a teaspoon of sugar, a dash of salt and a teaspoon of crushed garlic.

I am really liking Indian food right now and these are wonderful! I baked them rather than frying them in a 450 degree oven on a cookie sheet sprayed with cooking spray. Cook for 9 min. on one side, flip and another 9 minutes on the other. Came out great!
I can also see where these would work well in a sprayed muffin tin.
You can tell I don’t like to fry!
I never tried it and like I said I have usually been using frozen spinach these days, but I think the kale might be nice.
I have some kale and I am wondering if I could use that in place of the spinach.
Palaak (spinach) paneer is my favorite indian dish. making indian spinach cutlets, just sounds to good to be true
I make this all the time now and it is a huge hit with grown ups and kids, but I use frozen spinach and it is even better and easier than fresh.
