Spinach Noodle Kugel

One of my favorite noodle kugel recipes that is almost a meal in itself, filled with spinach and noodles and lots of flavor.  It is freezer friendly and will become your go to. 

This recipe calls for onion soup mix. Make your own homemade MSG free kosher onion soup mix with this great and flavorful recipe*.

Spinach Noodle Kugel

Ingredients

  • 1 (12-ounce) package "Kluski" egg noodles
  • 1 (1-pound) package frozen chopped spinach, defrosted and drained well
  • 1/4 cup onion soup mix
  • 1 cup soy milk
  • 3 eggs, beaten
  • 2 ounces margarine, melted

Preparation

1 Preheat oven to 350°F.  Grease a 9x13 inch baking dish.

2 Cook noodles according to package directions.  Drain and place in a large bowl.

3 Add spinach, soy milk, onion soup mix, eggs and margarine.  Mix to combine.

4 Transfer to prepared baking dish and bake uncovered for 45 minutes or until lightly browned on top.
