One of my favorite noodle kugel recipes that is almost a meal in itself, filled with spinach and noodles and lots of flavor. It is freezer friendly and will become your go to.
This recipe calls for onion soup mix. Make your own homemade MSG free kosher onion soup mix with this great and flavorful recipe*.


Spinach Noodle Kugel

Ingredients
- 1 (12-ounce) package “Kluski” egg noodles
- 1 (1-pound) package frozen chopped spinach, defrosted and drained well
- 1/4 cup onion soup mix
- 1 cup soy milk
- 3 eggs, beaten
- 2 ounces vegan butter, melted
Instructions
- Preheat oven to 350°F. Grease a 9×13 inch baking dish.
- Cook noodles according to package directions. Drain and place in a large bowl.
- Add spinach, soy milk, onion soup mix, eggs and margarine. Mix to combine.
- Transfer to prepared baking dish and bake uncovered for 45 minutes or until lightly browned on top.

I don’t use soy or nut milks. Would this recipe work with chicken broth instead?

I have been using this recipe for years as is. Tonight I decided to change it up. I made it dairy with milk and butter instead of the soymilk and margarine. Used frozen chopped broccoli in place of the spinach and added 8oz. shredded mozzarella. It was delish!
Sure, just reduce cooking time and check on them as you cook.

If in Israel, DO NOT USE Osem’s WIDE EGG NOODLES as they are thick, heavy and loaded with starch. Osem’s Thin Egg Noodles are light and work well for this kugel. Israel is not known for its noodle production so look for Italian branded noodles.
Vegan Egg Replacer Powder or Arrowroot Powder (pricey)
I would reheat at around 200 degrees F for 30 minutes.

You can try it without eggs and maybe some starch for binder like matzo meal, but I would probably try it without eggs and just know it might not stick together well, the taste should still be good.
