The chaos of the holidays is finally behind us, and now we’re all facing the same question: What’s for dinner tonight?

As a busy mom and a registered dietitian, I know that two things are non-negotiable right now:

  1. Ease: I need minimal prep and even less cleanup (which is where “one-pot“ comes in!).
  2. Nourishment: After all the heavy holiday food, my family and I crave light, wholesome, and fiber-packed meals.
