3-Ingredient Middle Eastern Salad Dressing

When oil, salt and pepper don't count you can make endless variations of 3-ingredient salad dressings, just change up the lemon for any kind of vinegar and the cumin for any other spice and the parsley for any other herb, oh the possibilities.  

With this simple salad dressing you can make tons of different salads, like these easy, peasy 3-ingredient ones: 3-Ingredient Beet Salad, 3-Ingredient Couscous Salad, 3-Ingredient Wheat Berry Salad, 3-Ingredient Carrot Salad, and 3-Ingredient Chickpea Salad.

When I make salads for shabbos, a holiday or party it’s undoubtedly the most time consuming of all my meal prep. Each salad with it’s own signature dressing is comprised of a laundry list of ingredients.  With this genius new salad course hack I can make 5 different salads with 1 dressing and they all taste unique.

  • Juice of 1 ½ lemons (more to taste)
  • 3 tablespoons chopped flat-leaf parsley
  • 1 teaspoon cumin
  • Pinch of kosher or sea salt
  • ¾ cup extra virgin olive oil, such as Colavita


  1. Whisk lemon juice, parsley, cumin, and salt until mixed.
  2. Stream in evoo until mixture has emulsified. Top your favorite salad, or try it with one of our 3-Ingredient Salads.
