What’s In A Casserole? Plus 20 Meat Free Recipes

Layered Polenta Casserole

That which we call a dish, by any other name would be as comforting.

A casserole is defined as a stew that is cooked slow in the oven. It also refers to the cooking pan that can be used both in the oven and as a serving piece. No casserole does the job better than ceramic cookware. With bright colors on the outside and an easy clean interior, they are my go to casseroles. I recently got a few from Emile Henry, large lasagna size pieces and smaller round pie pans pans. I have found them both perfect for making large layered casseroles, sweet and savory pies and even simple stuffed mushrooms cooked in wine.

The added bonus of ceramic is that you can get them to match your color scheme, not just of your kitchen but to separate your meat and dairy cookware. I feel colored cookware was a real win for the kosher cook and I was grateful to receive blue and red dishes from Emile Henry, perfect for my kitchen.

You can of course use these casseroles to make kugels, but I think the defining difference between the two is that kugels are side dishes while casseroles are mains or even complete meals. 

So that’s what I love about a casserole, it’s a one pan meal that can be made ahead and reheated when ready. Here are some favorite casserole recipes.

Check out this new casserole I created using polenta and vegetables. I made it dairy at first with beans and mushrooms and my family loved it, but we all felt it didn’t really need the cheese, so it would be a great vegetarian entree/side dish to serve at a meat meal.

Casseroles are the ultimate make ahead foods. They may seem like a lot of work, but really they are an easy anytime dinner option.  Once all the components are ready it comes together fast and some can be a one pot meal or an incredible side. 

The best part about casseroles is that they are so freezer friendly, the ultimate make ahead dinners.  They are hearty and filling too, even without meat.  Check out 20 meat free casseroles.

    Re: Lasagnia Casserole, once a month I cook for 65 homeless -project called “Open Door” and last month I made a Cheesy tomato based Lasagnia Casserole, it went over so well I will be making it again next week. This is one of our temple (Synagogue) projects that I undertake. Glad to submit recipe if requested -Certainly Kosher

    A potato zucchini casserole that can be topped with cheese for dairy meals or matzo meal crumble for a parve meal…..it also contains onions and red peppers…on another note, your chocolate pecan pie is calling my name. I must try it.

    another vote for crustless spinach/cheese, and – i dont know if it counts as a caserole but buttered filo layers with cheese/egg mixture in between– once a year treat for shavuos!

    For a dairy casserole I make a broccoli cheese with a golden cracker crust top. To make it a hearty more filling dish you add pasta.

    A really nice Salsa Verde Chicken or Steak Enchilada Casserole is always nice, or a Bread Pudding w/apples,raisins and pecans w/bourbon sauce is also a great dessert casserole. Thank you for this opportunity. Found your show on Directv and really enjoy it. Used to make home made breads many years ago, and love Challah which I usually get from the Whole Foods store in Reno, NV on Fridays. Scared to make it though, as I am not so sure of myself anymore. Loved watching you make it though. I am not of the Jewish Faith, but grew up in the California Bay Area, so had neighbors of all faiths, and loved learning how to make so many ethnic foods. Truly miss those days. Thank you again.

    My favorite casserole is a mix of ground meat (beef or turkey) and white rice or noodles, bind with broth and stir in a can of sauerkraut and a few caraway seeds.

    I just made a casserole with baby spinach, eggs and quinoa that doesn’t need to be pre-cooked; the quinoa bakes along with the casserole. Optional, top with cheese and broil for a few minutes at the end. Yummy and easy!

    For dairy casseroles I like to make Broccoli Strata. For a Meat casserole I like Stuffed Cabbage. For vegetarian option I like to make parve Stuffed Peppers with either Faro or Quinoa.
