I love soup.

I really love soup.

Really, really, really.

There I said it. And am not at all embarrassed by the fact that hot soup on a hot day is appetizing to me. My grandfather (may he rest in peace) ate it to cool off on a hot day, smack in the middle of the day. Chicken soup, in 95 degree weather, on a Tuesday afternoon…yes! So he ate it, we ate it and we loved it.

But alas I know I am not with the masses on this one.

So summer soups are supposed to be cool and lighter yet filling at the same time (gosh talk about pressure).  So here you go a whole slew of chilled summer soups for the lot of you.

    My favorite summer soup is cucumber with yogurt, garlic and dill. It’s light and refreshing and easy to make, which is important in the summer when I try to spend as little time in the kitchen as possible.

    Lightly spicey tomato, corn gazpacho, but a miso w/ summer squash chunks and ginger luke warm is refreshing and replenishes much needed electrolytes too- enjoy! i am a healthy kosher foodie too!

    I love all cold, warm and hot soups but in these dog days of summer I crave a modified gazpacho with roasted corn, black beans and only the freshest of garlic and jalapenos- YUM!

    I’m a self proclaimed connoisseur when it comes to soups. There is nothing like a chilled soup to combat the brutal summer heat. The soup that stood out for me the most was the cold avocado soup. Minus the radish (which I intentionally left out since I’m not a big fan of radishes), its very creamy, light, and refreshing on the palate and I would highly recommend this recipe to everyone.     I used the leftovers as a condiment over poached salmon on a bed of fettuccine and it worked! Sometimes being daring and creative does pay off 🙂

    I make a delicious creamy strawberry made with dry white wine. For fancy occasions I serve it in champagne flutes with a few bejeweled skewers of tiny cubes of kiwi and blueberries and a slice of star fruit for drama. I lay the skewers (they are only a few inches long) across the top of the flute and then sprinkle some pomegranate arils and blueberries on the plate. My family loves my cold cherry soup make with a combo of sweet and sour cherries and a hint of cinnamon.

    My favorite is Fruit Soup made with sour cherries and red jello for the sweetness. This was my grandmother’s recipe.

    In honor of our Russian daughter-in -law, we grow sorrel for delicious, refreshing, homemade schav.
    BTW, she insists that borsch does not end with a “t”

    I love soup, though I’ll be honest and confess I’ve never had or made a cold soup, though it does sound delicious!

    My family’s favorite soup by far is my Chicken Tortilla Soup, which I’ve made so many times, I don’t measure anymore. But, even it being a spicy soup and well in the 90’s and sometimes in the 100’s ( like this summer) we still enjoy it. 🙂

    I actually love hot chicken soup in the summer. I never knew it was weird and asked my grandmother to make it in even when it was 90 degrees, and she never had air conditioning.

    I make and love Beansy-Greensy all year round. It’s based on whatever dried beans are in my pantry, plus whatever fresh greens are in my garden (or fridge). Salt and pepper, an improvised bouquet of herbs, and something for tang (this can be vinegar, lemon, or yogurt if you’re doing dairy). It’s different every time, and always delightful!

    My favorite summer soup is a cold strawberry, watermelon, basil and balsamic soup with a yogurt drizzle. Cool, refreshing, and makes use of the top summer fruits 🙂

    i make a winter minestreone without the pasta and in the summer its delicious cold, very refreshing with lots of veggies and just the right spices.

    Hands down…watermelon gazpacho…not a tomato in the dish. Pureed watermelon with chopped cucumber, celery, watermelon, and peppers, plus a bit of lime juice, red wine vinegar, and fresh mint…yum! A big hit at the Shabbat lunch table.

    My new favorite soup (and it’s summer, so this counts) is Moloukhiya (sp??). It’s an Egyptian dish that my mother in law makes (that I have yet to learn) with moloukhiya leaves she buys from the Arab store, and she always makes turkey with it, so she must use some of the turkey fat for it. It’s awesome, but is an acquired taste – you may not like it the first time, but by the third, you’ll be in love! Yummmm
