I really love soup.
Really, really, really.
There I said it. And am not at all embarrassed by the fact that hot soup on a hot day is appetizing to me. My grandfather (may he rest in peace) ate it to cool off on a hot day, smack in the middle of the day. Chicken soup, in 95 degree weather, on a Tuesday afternoon…yes! So he ate it, we ate it and we loved it.
But alas I know I am not with the masses on this one.
So summer soups are supposed to be cool and lighter yet filling at the same time (gosh talk about pressure). So here you go a whole slew of chilled summer soups for the lot of you.
My favorite is a Creamy Summer Squash soup.

Actually I agree with the theory of hot soup to cool off on a summer day but my actual favorite is gazpacho because of all the wonderful fresh produce available in summertime.

Favorie summer soup is a nice gazpacho. Best with fresh veggies and good for the end of a hot day.
My favorite summer soup : Homemade Summer squash blossom soup with Vegetable broth as the base, flavored with a bit of fresh thyme for zing.
Madrid Summer Chili!
Definitely a white gazpacho, preferably with smoked almonds to add a little intrigue to the green grapes, bell peppers, tomatoes and other vegetables. Mmm…

My favorite soup is a tomato soup made with fresh summer tomatoes, onions and wine.
In the summer I like luke warm, not hot, Italian Wedding Soup. With a hard roll for dunking, it’s refreshing and delicious. Thanks.

I don’t think my favorite cold summer soup has a name – or a set recipe. My husband makes it with homemade veggie broth and whatever veggies are fresh from the garden. The one staple is plenty of garlic. Yum!

I’ve never made homemade chilled soups, but I am a big fan of Gazpacho (sp?).

My favorite soup, Summer or Winter, is called Chicken Dalmation Chili. I use both black and white beans (hence the “dalmation”), lots of veggies and a great organic chicken broth.
My favorite summer soup is… turkey soup. It’s a favorite year round. 🙂
I just moved back north and i am so happy that I can now have soup 9 months of the year. I will not eat soup if it is above 75 degrees and humid. That being said, I have really enjoyed strawberry soup while living down south. I pour it over a white, yellow or sponge cake and top it with whipped cream. It make a nice strawberry shortcake. I even do this as a triffle. It is really pretty and delicious.
